With an ancient recipe that mainly uses three ingredients - eggs, sugar and flour - we produce the lightest of biscuits, a classic in the Piedmont tradition. We have added a touch of our own, by stressing the dough with a piping bag and baking the Novaresi twice, in order to reach the right consistency.
We decorate them with sugar grains, as tradition dictates, to which we add a dash of dark chocolate.
Since there is no butter in the dough, we have included the Novaresi in the Free from range, as they are suitable for anyone with lactose allergies or intolerances.
