In Venetian dialect, “Zaeti” means “little yellow” due to the intense colour provided by fine grain corn flour, the same flour used for another typical Venetian dish: polenta. The sweetness of the Australian Six Crown sultanas that we use in the dough is contrasted by the aromas of the grated orange and lemon zest.
Our Zaeti biscuits are cut into square shapes and processed by hand, one by one, which gives them their distinctive irregular shape.
